Ooey Gooey S’mores Bars
Summer is quickly coming to an end, and unfortunately, we haven’t been able to make many camping trips this year. Boo! And that also means that we haven’t been able to enjoy the yummy goodness of s’mores as often we like. Double boo! Luckily, I have this great s’mores bars recipe in my arsenal that totally hits the spot when I have that marshmallow-chocolate-graham craving.
This recipe is pretty easy to put together. Just spread foil out on a jelly roll pan, coat it with cooking spray and lay out graham crackers side by side on the foil.
In a medium sauce pan, heat butter and brown sugar, stirring it into a boiling concoction of deliciousness.
Pour the combination over the graham crackers and place that into the oven, preheated to 350 degrees, for 5-6 minutes. Watch for the bubbles.
Once it is ready, pull it out and add marshmallows and chocolate chips to the top. Then, pop it back into the oven to finish it off. The marshmallows will get soft and puffy. That’s how you know it is ready.
Pull it out and let it cool. We like to throw ours into the freezer to firm them up faster, plus this make them a bit less gooey, but don’t be surprised if they are still a little messy.

Ooey Gooey S’mores Bars
Ingredients
12 sheets of graham crackers
3/4 cup butter
3/4 cup brown sugar
3 1/2 cups mini marshmallows
1 bag mini semi-sweet chocolate chipsPreparation
Preheat oven to 350°F. Spread aluminum foil over a 15 inch jelly roll pan. Spray the foil with cooking spray. Line the top of the foil with graham crackers, breaking them into pieces to fill in any extra spaces.Melt butter and brown sugar over medium heat in a saucepan, stirring constantly. Allow mixture to come to a boil (approx. 5 min.) Remove from heat and pour evenly over crackers. Bake another 5 to 6 minutes, or until bubbly.
Remove pan from oven and immediately sprinkle mini marshmallows and mini chocolate chips over the crackers. Return pan to oven for another 2-3 minutes, or until marshmallows begin to soften and chocolate is melted.
Cool completely before serving.

Strawberry Avocado Salsa

One of our first posts was this super yummy Strawberry Avocado Salsa recipe. We only have a handful of recipes on the site, but all of them are tried and true favorites. And what better way to add a little love to a summer grill dish than with this mouth-watering savory/sweet salsa.
To start out, you need to grab some fresh strawberries. These were ripe from the patch!
Gather all of the ingredients. (Maybe fresh jalapenos and non wilt-y cilantro would look more appetizing?)
Don’t forget a dash of salt!
Chop up all the fruits and veggies in to small pieces.
Then mix everything together in a bowl and serve.
Seriously, this is one of the easiest and yummiest recipes! It is magically delicious. Like Lucky Charms. Minus the leprechaun.
Strawberry-Avocado Salsa from Cooking Light magazine
Yield
4 servings (serving size: 1/4 cup)Ingredients
• 1 cup finely chopped strawberries
• 1/4 cup finely chopped peeled avocado
• 2 tablespoons finely chopped red onion
• 2 tablespoons chopped fresh cilantro
• 1/2 teaspoon grated lime rind
• 2 tablespoons fresh lime juice
• 2 teaspoons finely chopped seeded jalapeno pepper
• 1/4 teaspoon sugarPreparation

Mediterranean Chicken Foil Packets
Now that grilling season is on it’s way, I wanted to share one our family’s favorite recipes with you: Mediterranean Chicken Foil Packets. They are super easy to whip up and Mmm Mmm good!
Note: This recipe is for one packet. Please multiply the ingredients by the number of people you will be serving.
To start, you will need a boneless skinless chicken breast, a Roma tomato, a red onion, feta cheese (I like the tomato-basil favored kind,) extra virgin olive oil, a couple of garlic cloves, thyme, salt, pepper and foil.
Next, place the chicken breast on a cutting board between two pieces of plastic wrap, and use a meat tenderizer to thin it out. (I appologize, as I forgot to take a photo of this process.)
Then, put your breast on the center of a large piece of aluminum foil. And by breast, I am referring to the chicken’s, not your own. Hehe.
After that, layer the onions, tomatoes, and feta on top of the chicken and season with salt, pepper, and thyme leaves.
Next, drizzle the olive oil all over.Now that all the yummy goodness is on the foil, it is time to fold it up. There is no real science to this, just fold it up and roll in the sides. I usually will fold a second piece of foil around my first, just to make sure none of the deliciousness seeps out.
Finally, toss your packet on the grill or in an oven for 25-30 minutes until the meat is cooked through. Carefully unfold the hot packet and enjoy your meal.
Mediterranean Chicken Foil Packets from Elizabeth Joan Designs
Yield
1 packet/servingIngredients
– 1 Boneless Skinless Chicken Breast
– 1 Roma Tomato, chopped
– 1/2 Red Onion, chopped
– 3 Tbs. Crumbled Tomato-Basil flavored Feta Cheese
– 1 Sprig of Thyme
– 2-3 Cloves of Garlic
– 1 Tbs. Extra Virgin Olive Oil
– Salt, to taste
– Pepper, to taste
– Aluminum foilPreparation
Pound out the chicken breast with a meat tenderizer. Place the chicken on the center of a large piece of foil. Layer tomatoes, feta, onions, salt, pepper and thyme leaves on top. Drizzle with olive oil and fold up packet. Bake in a 350 degree preheated oven or grill for 25-30 minutes or until chicken reaches 170 degrees. Carefully unfold packet and serve.___________________________________________________
